Since 1998 Paul Dahlenburg has been in charge of Baileys, and has overseen an expansion in the vineyard to 143 ha and the construction of a 2000-tonne winery. The cellar door has a heritage museum, winery viewing deck, contemporary art gallery and landscaped grounds, preserving much of the heritage value. Baileys has also picked up the pace with its Muscat and Tokay, reintroducing the Winemaker’s Selection at the top of the tree, while continuing the larger-volume Founder series. Winemakers Selection Old Tokay NV – 5 glassesObvious age showing from its mahogany/olive-green colour; classic tea-leaf, butterscotch and malt flavours; great harmony with the spirit; a long finish, at once sweet yet dry and spicy. Drink: To 2010 95 points Winemakers Selection Old Muscat NV – 5 glassesGloriously rich, luscious and powerful; retains the essence of raisin muscat, but complexed by rancio and oriental spices; again, perfect harmony with the fortifying spirit. Founder Liqueur Muscat NV – 5 GlassesIntense, lively, grapey varietal character of raisins and plum pudding; acidity gives more lift and intensifies the flavour, yet does not bite; the volatile component of the acidity appears low. Drink: To 2010 94 points Founder Liqueur Tokay NV – 4½ GlassesModerate age; classic tea-leaf, butterscotch and malt aromas and flavours; a lingering sweetness through the palate, then a final farewell is (commendably) almost dry. Drink: To 2010 93 points
